Description

Flavorful griddle fried rice cooked on a Blackstone flat top with simple ingredients like eggs, vegetables, soy sauce, and day-old rice for a quick restaurant-style meal.


Ingredients

  • 4 cups cooked long-grain white rice (day-old, cold)
  • 2 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 cup frozen peas and carrots
  • 3 large eggs
  • 3 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat the Blackstone griddle to about 350°F and spread vegetable oil across the surface
  2. Add frozen peas and carrots and sauté for 3-5 minutes until soft then move them to the cooler side of the griddle
  3. Pour beaten eggs onto the griddle and scramble until fully cooked then move them beside the vegetables
  4. Spread the cooked rice across the griddle and add sesame oil soy sauce salt and pepper
  5. Stir and sauté the rice for 3-4 minutes until heated through and slightly toasted
  6. Combine the vegetables eggs and rice together and mix thoroughly before serving warm

Notes

  1. Use cold day-old rice for the best texture
  2. Spread the rice in a thin layer on the griddle to allow crispy bits to form
  3. Add soy sauce gradually around the edges for even flavor
