Description

Refreshing chickpea salad with feta, dried cranberries, fresh herbs, and a bright lemon vinaigrette.


Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup crumbled feta cheese
  • 1/3 cup dried cranberries
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons toasted almonds or walnuts
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Drain and rinse the chickpeas thoroughly.
  2. Add chickpeas, feta, cranberries, red onion, parsley, and nuts to a large bowl.
  3. In a small bowl, whisk olive oil, lemon juice, honey, Dijon mustard, garlic powder, salt, and pepper.
  4. Pour vinaigrette over the salad.
  5. Toss gently until evenly coated.
  6. Adjust seasoning and serve immediately or chilled.
