Description

Fresh pineapple salsa with peppers, lime juice, and cilantro. This healthy dip is perfect with chips or as a topping for grilled chicken and fish.


Ingredients

Scale
  • 1 small pineapple chopped (about 3 cups)
  • 1 small red pepper diced
  • 1 small green pepper diced
  • 1/2 red onion chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup lime juice from about 12 medium limes
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt

Instructions

  1. Add pineapple, red pepper, green pepper, red onion, and cilantro to a medium bowl
  2. Whisk together lime juice, olive oil, honey, ground cumin, and salt in a small bowl
  3. Pour the dressing over the salsa ingredients
  4. Toss everything together until well combined
  5. Cover and refrigerate for up to 24 hours before serving

Notes

  1. Fresh pineapple provides the best flavor but canned pineapple in juice also works
  2. Replace cilantro with chopped parsley if desired
  3. Add chopped jalapeno or chili for extra heat
  4. Do not skip lime juice because it helps keep the pineapple fresh
