Description
Fresh pineapple salsa with peppers, lime juice, and cilantro. This healthy dip is perfect with chips or as a topping for grilled chicken and fish.
Ingredients

- 1 small pineapple chopped (about 3 cups)
- 1 small red pepper diced
- 1 small green pepper diced
- 1/2 red onion chopped
- 1/4 cup cilantro chopped
- 1/4 cup lime juice from about 1–2 medium limes
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
Instructions
- Add pineapple, red pepper, green pepper, red onion, and cilantro to a medium bowl
- Whisk together lime juice, olive oil, honey, ground cumin, and salt in a small bowl
- Pour the dressing over the salsa ingredients
- Toss everything together until well combined
- Cover and refrigerate for up to 24 hours before serving
Notes
- Fresh pineapple provides the best flavor but canned pineapple in juice also works
- Replace cilantro with chopped parsley if desired
- Add chopped jalapeno or chili for extra heat
- Do not skip lime juice because it helps keep the pineapple fresh
