Description

These easy mini cheesecake bites are creamy, portable, and perfect for any occasion.   • 1 cup (120 g) graham cracker crumbs

  • 2 tbsp (30 g) granulated sugar

  • 4 tbsp (60 g) unsalted butter, melted

  • 16 oz (450 g) cream cheese, softened

  • 1/2 cup (100 g) granulated sugar

  • 2 large eggs

  • 1 tsp (5 ml) pure vanilla extract

  • Optional toppings: fresh berries, fruit compote, or chocolate drizzle


Instructions

  • Preheat oven to 325°F (165°C) and line a mini muffin tin with paper liners.

  • Mix graham cracker crumbs, 2 tbsp sugar, and melted butter until combined.

  • Press 1 tsp of the crust mixture into each liner.

  • Beat cream cheese until smooth. Add 1/2 cup sugar, eggs, and vanilla; mix until creamy.

  • Fill each liner with cheesecake batter nearly to the top.

  • Bake for 18–20 minutes or until centers are set. Cool completely, then refrigerate for at least 2 hours.

  • Add desired toppings before serving.

Notes

Ensure cream cheese is at room temperature for a smooth batter.

Chill thoroughly before serving for the best texture.
