- 1 pound ground beef
- 1/2 packet taco seasoning
- 4 large flour tortillas
- 1 cup refried beans
- 1 cup shredded Mexican taco blend cheese
- 1 cup red enchilada sauce
- 1/2 cup chopped tomatoes
- Fresh cilantro for garnish
- Sour cream for garnish
Instructions
- Cook ground beef in a frying pan with taco seasoning until browned then drain excess fat.
- Heat tortillas in a skillet flipping until both sides become slightly crisp.
- Place one tortilla on a pizza stone or baking sheet and spread refried beans evenly.
- Add shredded cheese and cooked ground beef on top.
- Place a second tortilla over the filling.
- Spread 3 to 4 tablespoons enchilada sauce over the top tortilla leaving about half inch border.
- Sprinkle cheese over the sauce leaving space around the edge.
- Broil for about 2 minutes rotating the pan halfway through until cheese melts.
- Remove from oven and allow to cool slightly.
- Top with chopped tomatoes cilantro and sour cream then slice and serve.
