Easy Cherry Clafoutis is a classic French dessert with juicy cherries baked in a light vanilla custard batter.

- 1 1/2 cups fresh sweet cherries, pitted
- 3 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 tablespoons granulated sugar for topping
- 1 cup whole milk or half and half
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat oven to 350 degrees F and butter a 9-inch or 10-inch baking dish.
- Arrange cherries evenly across the bottom of the dish.
- Blend eggs, flour, sugar, milk, vanilla extract, almond extract, and salt until smooth.
- Pour batter over cherries and sprinkle reserved sugar on top.
- Bake for 35 to 45 minutes until custard is set and lightly golden.
- Cool for 15 minutes before serving and dust with powdered sugar.
Notes
- Fresh, canned, or frozen cherries all work well.
- Drain canned or thawed frozen cherries thoroughly before baking.
- Store leftovers in the refrigerator for up to 4 days.
- Reheat gently in the microwave or oven before serving.
