Description

Easy Cherry Clafoutis is a classic French dessert with juicy cherries baked in a light vanilla custard batter.


Ingredients

Scale
  • 1 1/2 cups fresh sweet cherries, pitted
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tablespoons granulated sugar for topping
  • 1 cup whole milk or half and half
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350 degrees F and butter a 9-inch or 10-inch baking dish.
  2. Arrange cherries evenly across the bottom of the dish.
  3. Blend eggs, flour, sugar, milk, vanilla extract, almond extract, and salt until smooth.
  4. Pour batter over cherries and sprinkle reserved sugar on top.
  5. Bake for 35 to 45 minutes until custard is set and lightly golden.
  6. Cool for 15 minutes before serving and dust with powdered sugar.

Notes

  1. Fresh, canned, or frozen cherries all work well.
  2. Drain canned or thawed frozen cherries thoroughly before baking.
  3. Store leftovers in the refrigerator for up to 4 days.
  4. Reheat gently in the microwave or oven before serving.
