Ingredients

1 baked carrot cake (homemade or from a box mix)

1/2 cup white chocolate (or almond bark or candy melts)

1/4 cup crushed walnuts or coconut (optional)

Instructions

Bake a carrot cake and let it cool completely. Crumble the cake into small pieces.

In a large bowl, mix the crumbled cake and cream cheese until smooth and sticky.

Roll the mixture into 1-inch balls and place them on a parchment-lined tray.

Chill the truffles in the fridge for 30 minutes or in the freezer for 10-15 minutes.

Melt the white chocolate (or almond bark) in the microwave or a double boiler.

Dip each truffle in the melted chocolate, letting the excess drip off.
