Description

Classic New Orleans beignets that are soft, pillowy, and generously dusted with powdered sugar.


Ingredients

Scale
  • 1 cup warm water (110°F)
  • 1 tablespoon instant yeast
  • 3 tablespoons granulated sugar
  • 2 large eggs
  • 2 tablespoons vegetable oil
  • 3 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1 cup confectioners’ sugar
  • 2 quarts vegetable oil for frying

Instructions

  1. Combine water, yeast, and sugar and let foam.
  2. Whisk in eggs and oil.
  3. Stir in flour and salt to form sticky dough.
  4. Cover and refrigerate 4 to 18 hours.
  5. Roll dough out and cut into squares.
  6. Heat oil to 350°F and fry until golden.
  7. Drain and dust with powdered sugar.

Notes

  1. Fry only a few beignets at a time.
  2. Use a thermometer for steady oil temperature.
  3. Dust heavily with powdered sugar before serving.
