Description
Classic New Orleans beignets that are soft, pillowy, and generously dusted with powdered sugar.
Ingredients

- 1 cup warm water (110°F)
- 1 tablespoon instant yeast
- 3 tablespoons granulated sugar
- 2 large eggs
- 2 tablespoons vegetable oil
- 3 cups all-purpose flour
- 3/4 teaspoon salt
- 1 cup confectioners’ sugar
- 2 quarts vegetable oil for frying
Instructions
- Combine water, yeast, and sugar and let foam.
- Whisk in eggs and oil.
- Stir in flour and salt to form sticky dough.
- Cover and refrigerate 4 to 18 hours.
- Roll dough out and cut into squares.
- Heat oil to 350°F and fry until golden.
- Drain and dust with powdered sugar.
Notes
- Fry only a few beignets at a time.
- Use a thermometer for steady oil temperature.
- Dust heavily with powdered sugar before serving.
