Creamy Dill Pickle Pasta Salad made with rotini, crunchy pickles, cheese, and a tangy homemade dill dressing.
Ingredients

- 16 oz rotini pasta
- 1/3 cup dill pickle juice
- 2 cups chopped baby dill pickles
- 8 oz Colby Jack cheese, cubed
- 1 small white onion, finely chopped
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/3 cup dill pickle juice
- 2 tablespoons fresh dill
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook pasta in salted water until tender
- Drain and rinse pasta with cold water
- Pour pickle juice over pasta and let sit briefly
- Drain pasta again and return to bowl
- Add pickles, cheese, and onion and stir
- Mix dressing ingredients in a separate bowl
- Pour dressing over pasta and mix well
- Refrigerate 1 to 2 hours before serving
Notes
- Use full-fat mayonnaise for best texture
- Baby dill pickles give the best crunch
- Serve within a few hours for best creaminess
