Description

Creamy Dill Pickle Pasta Salad made with rotini, crunchy pickles, cheese, and a tangy homemade dill dressing.


Ingredients

Scale
  • 16 oz rotini pasta
  • 1/3 cup dill pickle juice
  • 2 cups chopped baby dill pickles
  • 8 oz Colby Jack cheese, cubed
  • 1 small white onion, finely chopped
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/3 cup dill pickle juice
  • 2 tablespoons fresh dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook pasta in salted water until tender
  2. Drain and rinse pasta with cold water
  3. Pour pickle juice over pasta and let sit briefly
  4. Drain pasta again and return to bowl
  5. Add pickles, cheese, and onion and stir
  6. Mix dressing ingredients in a separate bowl
  7. Pour dressing over pasta and mix well
  8. Refrigerate 1 to 2 hours before serving

Notes

  1. Use full-fat mayonnaise for best texture
  2. Baby dill pickles give the best crunch
  3. Serve within a few hours for best creaminess
