Description

Dark Chocolate Rhubarb Brownies are fudgy, rich, and perfectly balanced with sweet chocolate and tart rhubarb for a moist and indulgent dessert.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 cup rhubarb diced
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 375°F and line an 8×8-inch baking pan with parchment paper.
  2. Whisk sugar, oil, eggs, and vanilla in a bowl until smooth.
  3. In another bowl, mix flour, cocoa powder, baking powder, and salt.
  4. Combine wet and dry ingredients and mix until just incorporated.
  5. Fold in rhubarb, chocolate chips, and nuts.
  6. Spread batter evenly into prepared pan.
  7. Bake for 20 to 25 minutes until a toothpick comes out mostly clean.
  8. Cool for at least 10 minutes before slicing into 9 squares.

Notes

  1. If using frozen rhubarb, thaw and dry it well before adding.
  2. Add 10-15 minutes to baking time if using frozen rhubarb.
  3. Avoid overbaking to keep brownies moist and fudgy.
