Description

A luxurious Dark Chocolate Raspberry Mousse Cake combining rich chocolate layers, airy raspberry mousse, and glossy ganache for a stunning dessert.

For the Cake:

  • 1 cup all-purpose flour

  • 1/2 cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup buttermilk

For the Raspberry Mousse:

  • 1 cup fresh raspberries (plus extra for garnish)

  • 1/4 cup granulated sugar

  • 1 cup heavy cream

  • 1 teaspoon vanilla extract

  • 4 ounces dark chocolate, melted and cooled

For the Ganache:

  • 4 ounces dark chocolate, chopped

  • 1/2 cup heavy cream


Instructions

  • Preheat oven to 350°F (175°C) and prepare two 8-inch pans.

  • Cream butter and sugar until fluffy, then add eggs and vanilla.

  • Combine dry ingredients and add alternately with buttermilk.

  • Bake for 25–30 minutes; cool completely.

  • Blend raspberries with sugar and strain.

  • Whip cream and vanilla, fold in melted chocolate and raspberry puree.

  • Layer cake with mousse, chill for 1 hour.

  • Heat cream and pour over chocolate to make ganache.

  • Pour ganache over chilled cake and garnish with raspberries.

Notes

Chill before serving for a firm texture.

Use fresh raspberries for best flavor.
