Description

This Custard Peach Pie combines juicy peaches, creamy Greek yogurt custard, a flaky pie crust, and buttery streusel topping for a warm American dessert.


Ingredients

  • 1 single pie crust pastry, unbaked
  • 1 cup Greek yogurt, labne, or sour cream
  • 3 large egg yolks
  • 3/4 cup sugar
  • 5 medium peaches, peeled and sliced 1/2 inch thick, about 1 1/2 pounds
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 cup cold butter, cut into small pieces
  • 1/3 cup all-purpose flour, for streusel
  • 1/8 cup sugar, for streusel

Instructions

  1. Heat oven to 425°F.
  2. Roll the pie crust slightly larger than the pie plate, place it in the dish, trim the edge, and crimp as desired.
  3. Peel and slice the peaches into 1/2-inch slices, then arrange them evenly over the bottom of the pie crust.
  4. Whisk Greek yogurt, egg yolks, 1/4 cup flour, 3/4 cup sugar, and vanilla until smooth.
  5. Pour the custard mixture evenly over the peaches.
  6. Bake the pie for 30 minutes, or until the custard just begins to set.
  7. Meanwhile, make the streusel by rubbing cold butter into 1/3 cup flour until crumbly, then mix in 1/8 cup sugar.
  8. Remove the pie from the oven and sprinkle the streusel evenly over the center.
  9. Bake for 15 more minutes, or until a knife inserted into the center comes out clean.
  10. Cool the pie on a wire rack for 1 hour before serving warm.

Notes

  1. Use 2 cans of sliced peaches, drained well, in place of fresh peaches.
  2. Use 20 ounces frozen peach slices, thawed, drained, and brought to room temperature, in place of fresh peaches.
  3. Sour cream may replace Greek yogurt for a richer custard.
  4. Rhubarb, blueberries, cherries, or nectarines may replace peaches.
  5. Cover crust edges with foil or a pie shield if they brown too quickly.
