Curry Sauce (makes 4 servings):

  • 2 tbsp (30 ml) vegetable oil

  • 1 large onion, finely diced

  • 2 medium carrots, peeled and cut into bite-size triangles

  • 2 medium potatoes, cut into 1-inch chunks

  • 5 cups (1.2 L) dashi or chicken/vegetable stock

  • 1 tbsp (15 ml) ketchup

  • 1 tbsp (15 ml) soy sauce

  • 4 curry roux cubes (about 3.5 oz / 100 g)

  • Optional thickener: 2 tbsp (16 g) cornstarch + 2 tbsp (30 ml) water

Tornado Omelet & Rice (for 2 servings):

  • 1 tbsp (15 ml) olive oil

  • 1 tbsp (14 g) butter

  • 2 large eggs

  • ¼ tsp (1.5 g) salt

  • 1 tbsp (8 g) cornstarch + 2 tbsp (30 ml) water

  • 2 servings steamed rice, tightly packed


Instructions

  • Make the Curry:
    Heat oil in a large pot over medium heat. Sauté onion for 3–4 minutes until translucent. Add carrots and potatoes, stir briefly, then pour in stock. Bring to a boil, skimming any foam. Lower heat and simmer 12–15 minutes until tender. Stir in ketchup, soy sauce, and curry roux cubes until melted and smooth. If thicker texture is desired, add cornstarch slurry gradually. Keep warm.

  • Prepare the Egg Slurry:
    Whisk eggs and salt in a bowl until smooth. Combine cornstarch and water, then whisk into the eggs for a soft, custard-like texture.

  • Cook the Tornado Omelet:
    Heat olive oil and butter in a nonstick skillet (10–12 inch) over medium-low heat. Pour in the egg mixture. When the bottom begins to set, use two chopsticks to pull the edges toward the center while twisting slightly to form a spiral. Rotate the pan gently until the bottom sets but the top remains glossy.

  • Assemble:
    Pack hot rice into small bowls and invert onto plates to form neat domes. Slide the omelet over each rice mound and ladle hot curry around it.

Notes

Don’t worry if your first omelet isn’t perfect—low heat and patience are key.
