Description

This cucumber shrimp salad combines tender shrimp, crisp cucumber, fresh dill, and a creamy lime dressing for a light and refreshing seafood dish.


Ingredients

Scale
  • 2 pounds shrimp, peeled and deveined
  • 1 English cucumber, small diced
  • 3 green onions, thinly sliced
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 large lime, zested and juiced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 1/4 teaspoon kosher salt
  • Black pepper, to taste

Instructions

  1. Stir together mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper until smooth
  2. Bring a pot of water to a boil and cook shrimp for 2 to 3 minutes until pink
  3. Transfer shrimp to an ice water bath, cool, drain, and chop into bite-sized pieces
  4. Mix shrimp, cucumber, green onions, and dressing until fully combined

Notes

  1. Use a juicy lime for the best flavor
  2. Do not overcook the shrimp to keep them tender
