Description

Old fashioned cucumber onion salad made with vinegar, fresh cucumbers, and sweet onions.


Ingredients

Scale
  • 1/3 cup distilled white vinegar or white wine vinegar
  • 1/4 cup very warm water
  • 1 teaspoon sugar (optional)
  • 1 teaspoon table salt or Kosher salt
  • 2 large cucumbers or 1 large English cucumber, sliced
  • 1/2 cup sweet onion slivers
  • Freshly ground black pepper (optional)

Instructions

  1. Whisk vinegar, water, sugar, and salt in a medium bowl until dissolved.
  2. Peel cucumbers if needed and slice evenly.
  3. Add cucumber slices and onion slivers to the vinegar mixture.
  4. Stir gently to coat the vegetables.
  5. Cover and chill in the refrigerator at least 2 hours.
  6. Serve chilled with a slotted spoon.
  7. Sprinkle with black pepper if desired.

Notes

  1. Use warm water to dissolve salt and sugar.
  2. Optionally remove cucumber seeds if large.
  3. Longer marination enhances flavor.
  4. Can substitute with creamy dressing or store-bought vinaigrette.
  5. Red onions add color and sweetness.
  6. Apple cider vinegar adds flavor but can discolor cucumbers and onions.
