Description
Old fashioned cucumber onion salad made with vinegar, fresh cucumbers, and sweet onions.
Ingredients

- 1/3 cup distilled white vinegar or white wine vinegar
- 1/4 cup very warm water
- 1 teaspoon sugar (optional)
- 1 teaspoon table salt or Kosher salt
- 2 large cucumbers or 1 large English cucumber, sliced
- 1/2 cup sweet onion slivers
- Freshly ground black pepper (optional)
Instructions
- Whisk vinegar, water, sugar, and salt in a medium bowl until dissolved.
- Peel cucumbers if needed and slice evenly.
- Add cucumber slices and onion slivers to the vinegar mixture.
- Stir gently to coat the vegetables.
- Cover and chill in the refrigerator at least 2 hours.
- Serve chilled with a slotted spoon.
- Sprinkle with black pepper if desired.
Notes
- Use warm water to dissolve salt and sugar.
- Optionally remove cucumber seeds if large.
- Longer marination enhances flavor.
- Can substitute with creamy dressing or store-bought vinaigrette.
- Red onions add color and sweetness.
- Apple cider vinegar adds flavor but can discolor cucumbers and onions.
