Ingredients

2 medium cucumbers, thinly sliced (≈ 400 g)

2 ripe avocados, pitted, peeled, and diced (≈ 300 g)

¼ cup (40 g) red onion, finely chopped

2 tbsp (30 ml) fresh lemon juice

2 tbsp (30 ml) extra virgin olive oil

½ tsp (3 g) sea salt, or to taste

¼ tsp (1 g) freshly ground black pepper

2 tbsp (6 g) fresh parsley, chopped
Instructions

Slice cucumbers into thin rounds and place in a large bowl.

Dice avocados into cubes and add to cucumbers.

Add finely chopped red onion.

Drizzle with lemon juice and olive oil.

Toss gently to avoid squashing the avocado.

Notes
Use firm but ripe avocados for best texture.
Substitute parsley with cilantro or dill for variety.
