Description

This crustless rhubarb pie is a creamy custard dessert made with fresh rhubarb and simple pantry ingredients. It is quick, easy, and perfect for a homemade treat.


Ingredients

  • 3 cups rhubarb diced
  • 1/3 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk
  • 1 teaspoon butter softened

Instructions

  1. Preheat oven to 375°F and dice the rhubarb
  2. Grease a 9-inch pie plate with butter and add the rhubarb
  3. Blend flour, sugar, baking powder, salt, eggs, vanilla, and milk until smooth
  4. Pour the mixture over the rhubarb
  5. Bake for 40 minutes until center is slightly jiggly
  6. Let cool for 10 to 15 minutes before serving

Notes

  1. Use frozen rhubarb and bake 10 minutes longer
  2. Serve with ice cream for better flavor
