Instructions

Prepare the roast: Place chuck roast in the crockpot.

Blend the sauce: In a blender, combine olive oil, tomato paste, soy sauce, honey, vinegar, ginger, chipotle peppers, paprika, thyme, salt, and pepper. Blend until smooth.

Add to crockpot: Pour the sauce over the beef and coat evenly. Add 1½ cups pineapple chunks and 1 cup of water. Cover and cook on LOW for 5 hours or HIGH for 3 hours, until tender.

Shred the beef: Once cooked, shred the meat directly in the crockpot and stir to coat with sauce.
