  • 1 packet taco seasoning (about 1 oz)

  • 1 can (10 oz) Rotel, strained

  • Juice of 1 lime

Instructions

  1. Prep the slow cooker: Spray your 6- or 7-quart crockpot with nonstick spray for easy cleanup.

  2. Add the ingredients: Lay chicken flat in the slow cooker. Sprinkle taco seasoning, pour in Rotel, and add lime juice on top.

  3. Cook low and slow: Cover and cook on high for 3–4 hours or low for 7–8 hours, until the chicken is tender and fully cooked.

  4. Shred the chicken: Drain excess liquid, keeping about ½ cup. Shred chicken directly in the crockpot using two forks.
