Description

Tender beef, potatoes, carrots, and onions cook slowly in a rich tomato and cream of celery gravy. This easy Crock Pot Beef Stew requires only 15 minutes of preparation and makes a hearty family dinner.


Ingredients

  • 2 packages dry onion soup mix, 1 ounce each
  • 1/2 teaspoon paprika
  • 2 pounds beef stew meat or boneless beef roast, cut into 1-inch pieces
  • 5 medium potatoes, peeled and diced
  • 2 to 3 cups baby carrots
  • 1 small yellow onion, chopped
  • 2 cans cream of celery soup, 10 ounces each
  • 1 cup ketchup or tomato sauce
  • Nonstick cooking spray or a small amount of oil

Instructions

  1. Lightly grease a 7-quart slow cooker insert.
  2. Combine the dry onion soup mix and paprika in a large zip-top bag.
  3. Add the beef in batches, seal the bag, and shake until every piece is evenly coated.
  4. Spread the seasoned beef across the bottom of the slow cooker.
  5. Layer the diced potatoes, baby carrots, and chopped onion evenly over the beef.
  6. Stir the cream of celery soup and ketchup together in a small bowl until smooth.
  7. Pour the soup mixture evenly over the meat and vegetables.
  8. Cover and cook on low for 7 to 8 hours, or until the beef and vegetables are tender.
  9. Stir thoroughly so the sauce coats the beef and vegetables, then serve hot.

Notes

  1. Cut the beef and potatoes into evenly sized 1-inch pieces so they cook at a similar rate.
  2. Do not add extra water because the meat and vegetables release moisture while cooking.
  3. Replace the ketchup with an equal amount of tomato sauce for a less sweet gravy.
  4. Chuck roast works especially well because its marbling becomes tender during slow cooking.
  5. Avoid lifting the lid frequently because released heat may increase the cooking time.
  6. Refrigerate leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
