Description
Crispy zucchini garlic bites are a baked, cheesy snack packed with fresh herbs and tender zucchini. Perfect as a healthy finger food or crowd-pleasing appetiser, they’re golden on the outside, moist on the inside, and made for dunking in marinara. A must-try for zucchini season!
Ingredients

2 medium zucchini (approx. 450 g / 1 lb), shredded

2 cloves garlic, grated

1 large egg

50 g (½ cup) grated Parmesan cheese

40 g (½ cup) breadcrumbs

2 tbsp chopped chives

1 tbsp chopped fresh parsley

1 tbsp chopped fresh basil

1 tsp chopped fresh oregano

½ tsp salt

¼ tsp ground black pepper

Marinara sauce for dipping
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment or spray with non-stick spray.

Shred zucchini. If large, halve and remove seeds first. Wrap in a clean towel and squeeze out excess moisture.

In a bowl, combine zucchini, garlic, egg, Parmesan, breadcrumbs, herbs, salt, and pepper. Mix well.

Scoop tablespoon-sized portions and form into small balls.

Place on prepared baking sheet.

Bake for 20–25 minutes, until golden and crisp.

Serve warm with marinara sauce.
Notes
Removing excess moisture from zucchini is essential for crisp texture.
Panko breadcrumbs can be used for a crunchier bite.
Dried herbs can substitute fresh (use half the amount).
A cookie scoop helps keep size uniform.
Freezer-friendly: reheat from frozen in the oven for 10–12 minutes.
