Description

Crispy Rice Paper Spring Rolls made with fresh vegetables and herbs, fried until golden and served with soy sauce and lime.


Ingredients

  • Rice noodles
  • Carrots, julienned
  • Cucumber, julienned
  • Bell peppers, thinly sliced
  • Fresh herbs (mint or cilantro)
  • Lettuce leaves
  • Rice paper wrappers
  • Soy sauce
  • Fresh lime juice
  • Neutral oil for frying

Instructions

  1. Soak rice noodles in warm water until soft and drain
  2. Prepare vegetables into thin strips
  3. Soak rice paper briefly until flexible
  4. Add filling near edge and roll tightly
  5. Heat oil and fry rolls until golden on all sides
  6. Drain briefly and serve hot

Notes

  1. Keep fillings dry for best crispness
  2. Do not overfill wrappers
