- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 to 1/2 teaspoon black pepper
- 1/2 cup low-fat sour cream
- 1/4 teaspoon ground mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon dried dill
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 425°F and line a baking sheet with foil.
- Lightly grease the foil with cooking spray.
- Cut zucchini into 1/4-inch matchsticks.
- Mix breadcrumbs, Parmesan, parsley, garlic powder, onion powder, salt, and pepper in a shallow dish.
- Beat eggs in a separate shallow dish.
- Place zucchini and flour in a zipper bag and shake to coat.
- Dip zucchini in egg mixture.
- Coat zucchini in breadcrumb mixture.
- Arrange on baking sheet in a single layer.
- Bake for 20 minutes until golden and crispy.
- Whisk dipping sauce ingredients together until smooth.
- Serve immediately with dipping sauce.
