Preheat Oven to 425°F (220°C). Line two baking sheets with parchment paper and place oven racks in upper and lower thirds.

Cut Sweet Potatoes: Peel and slice into planks about 0.6 to 1.3 cm thick, then into sticks. Cut long sticks in half.

Make Cornstarch Slurry: Mix cornstarch with water in a large bowl until smooth. Toss in sweet potato sticks to coat.

Season: Sprinkle with garlic powder, paprika, and sea salt. Toss again to distribute seasonings evenly.

Arrange Fries: Spread fries in a single layer on baking sheets without overlapping. Drizzle lightly with olive oil.
