Apple Fritter Bites are cozy, bite-sized fall treats packed with tender apple chunks, warm cinnamon spice, and topped with a sweet apple cider glaze. Baked instead of fried, they’re perfect for easy brunches, lunchbox snacks, or any autumn craving—no deep fryer needed.
Ingredients
For the Bites:

1 ½ cups (190g) all-purpose flour

2 teaspoons baking powder

½ teaspoon kosher salt

2 teaspoons ground cinnamon

¼ cup (57g) unsalted butter, melted

¼ cup (50g) granulated sugar

1 large egg

½ teaspoon vanilla extract

½ cup (120g) unsweetened applesauce

1 ½ cups (180g) finely diced Honeycrisp or Gala apples (about 2 medium)
For the Glaze:

2 cups (240g) powdered sugar

⅓ cup + 2 tbsp (100ml) apple cider or apple juice
Instructions

Preheat oven to 400°F (200°C) and coat a baking sheet with nonstick spray.

In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.

In a large bowl, whisk melted butter and sugar. Add egg, vanilla, and applesauce; mix until smooth.

Stir in the dry ingredients until just combined, then fold in the apples.

Drop tablespoon-sized portions of batter onto the baking sheet.

Bake for 10 minutes.

While baking, prepare glaze by whisking powdered sugar and apple cider until smooth.

Remove bites from oven, switch to broil. Brush bites with glaze and broil 2–4 minutes, rotating for even browning.

Brush again with glaze after broiling. Let rest 15 minutes before serving.
Notes
Dice apples finely for a consistent texture.
Watch closely under the broiler to avoid burning.
Leftover glaze is great on pancakes or toast.
