Description

Crispy Korokke (Japanese Potato Croquettes) are golden, crunchy bites with a creamy potato-and-meat center. Air-fried or baked for less mess, these croquettes deliver that perfect contrast of crisp exterior and soft, savory filling—an easy yet impressive comfort food for busy weeknights or special dinners.

For the Potatoes:

  • 4 potatoes (500 g / 1.1 lb), chopped

  • 1 Tbsp milk (15 ml)

  • ½ Tbsp butter (7 g)

  • ¼ tsp salt

  • ¼ tsp pepper

For the Meat Filling:

  • ½ onion, finely chopped

  • 150 g (5.3 oz) ground beef (or pork or tofu)

  • 1½ Tbsp sugar (18 g)

  • 2 Tbsp soy sauce (30 ml)

  • ½ tsp dashi powder (or beef/vegetable stock powder)

  • ½ Tbsp vegetable oil (7 ml)

For the Coating:

  • 2 Tbsp all-purpose flour (16 g)

  • 1 Tbsp cornstarch (8 g)

  • 2 eggs

  • ¾ cup panko crumbs (60 g / 2.11 oz)

  • Salt and pepper, to taste

  • 2 Tbsp vegetable oil (30 ml), divided

To Serve With:

  • Fresh tomato slices

  • Shredded lettuce or cabbage

  • Miso soup


Instructions

  • Cook the potatoes: Place chopped potatoes in a saucepan with cold water. Bring to a boil, cook 10 minutes or until fork-tender. Drain well.

  • Mash & season: Mash potatoes with milk, butter, salt, and pepper until smooth.

  • Sauté filling: Heat oil in a pan. Sauté onion until translucent. Add ground beef and cook until browned.

  • Flavor meat: Stir in soy sauce, sugar, and dashi powder. Cook until liquid evaporates.

  • Combine & chill: Mix meat into mashed potatoes. Chill 20 minutes to firm.

  • Shape patties: Form into 6 equal oval patties (~1 inch thick).

  • Coat: Prepare three stations—A: flour + cornstarch, B: beaten eggs, C: panko seasoned with salt/pepper. Dredge each patty in flour, dip in egg, then coat with panko.

  • Air fry: Preheat air fryer to 200 °C (400 °F) for 3 minutes. Place korokke in a basket (don’t overcrowd), drizzle with remaining oil, and cook 7 minutes, flipping if needed, until golden.

  • Serve: Plate immediately with tomato slices, shredded cabbage, and miso soup.

Notes

Chilling the filling ensures korokke hold their shape.

Use panko crumbs for the crunchiest crust.

Don’t overcrowd the air fryer—proper airflow keeps the coating crisp.

For deeper color, drizzle or spray a little oil on patties before cooking.

Freeze shaped, uncooked korokke for a future easy meal—just air fry from frozen, adding a few minutes.
