Description

Creole Chicken with Rice is a hearty Louisiana-style dish made with tender chicken simmered in a rich, spiced tomato sauce and served over fluffy white rice.


Ingredients

  • Kosher salt
  • Black pepper
  • Cayenne pepper
  • Chili powder
  • Smoked paprika
  • Boneless skinless chicken thighs and breasts
  • Vegetable oil
  • All-purpose flour
  • Onion
  • Celery
  • Poblano chile
  • Garlic
  • Roma tomatoes
  • Canned whole tomatoes
  • Chicken stock
  • Dried thyme
  • Bay leaves
  • Hot sauce
  • Long-grain white rice
  • Water
  • Scallions

Instructions

  1. Mix spices and coat chicken evenly.
  2. Dredge chicken with flour.
  3. Brown chicken in hot oil and set aside.
  4. Create roux with reserved flour.
  5. Cook vegetables until softened.
  6. Return chicken to pot with tomatoes, stock, herbs, and hot sauce.
  7. Simmer until thick and tender.
  8. Cook rice separately and serve chicken over rice.
