  • 2 tablespoons (28 g) butter

  • 1 yellow onion, diced

  • 10 cloves garlic, minced

  • 1 lb (450 g) carrots, peeled and diced

  • 2 large russet potatoes, peeled and diced (approx. 700 g)

  • 32 oz (950 mL) vegetable broth

  • 2 cups (180 g) finely diced broccoli florets

  • 8 oz (225 g) yellow sharp cheddar cheese, freshly grated

  • 2 cups (480 mL) milk

  • 2 tablespoons (16 g) all-purpose flour

  • Salt, to taste


Instructions

  • Melt & Sauté:
    Melt butter in a large pot or Dutch oven over medium-low heat. Add onion and garlic, sauté for 7–10 minutes until soft and fragrant.

  • Add Carrots:
    Stir in diced carrots and cook for 5 minutes to enhance their sweetness.

  • Simmer the Base:
    Add potatoes and pour in vegetable broth. Bring to a boil, then reduce heat and simmer 10–12 minutes, or until potatoes are fork-tender.

  • Thicken the Soup:
    In a small bowl, whisk milk and flour until smooth. Gradually pour into the pot, stirring constantly to avoid lumps.

  • Add Broccoli:
    Stir in broccoli florets and simmer 10–15 minutes until tender.

  • Get Cheesy:
    Add grated cheddar cheese and stir until melted and creamy. Season with salt to taste.

  • Serve:
    Ladle into bowls, top with extra cheese or cracked black pepper, and enjoy with crusty bread.
