Ingredients

1 lb (450 g) shrimp, peeled and deveined

2 Tbsp (30 ml) olive oil

1 cup (200 g) orzo

2 cups (480 ml) chicken broth

½ cup (120 ml) heavy cream

¼ cup (40 g) sun-dried tomatoes, chopped

¼ cup (25 g) Parmesan cheese, grated

Fresh spinach, for garnish
Instructions

Cook shrimp: Heat olive oil in a large skillet over medium heat. Sear shrimp for 2–3 minutes per side until pink and opaque. Remove and set aside.

Toast orzo: In the same skillet, add orzo and toast 1–2 minutes, stirring frequently until lightly golden.

Simmer: Pour in chicken broth, bring to a boil, then lower heat. Simmer 8–10 minutes, stirring occasionally, until orzo is tender and liquid absorbed.

Make creamy: Stir in heavy cream, sun-dried tomatoes, and Parmesan. Cook 2–3 minutes until creamy.

Finish: Return shrimp to the skillet, toss to coat, and garnish with fresh spinach. Serve warm.
Notes
Don’t overcook shrimp—remove when they curl into a “C” shape.
Use sun-dried tomatoes packed in oil for the best flavor.
Thin sauce with extra broth or cream if it gets too thick.
Add spinach just before serving so it stays fresh and vibrant.
