Description

Creamy tortellini with spinach is a comforting pasta dish that combines tender cheese tortellini with a rich, creamy sauce and fresh spinach. Perfect for weeknight dinners or special occasions, it’s a versatile dish that can be customized with proteins or extra veggies.


Ingredients

  • 1 package cheese tortellini (fresh, frozen, or dry)

  • 4 cups fresh spinach

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1/2 cup heavy cream

  • 1/4 cup milk

  • 1/2 cup Parmesan cheese, grated

  • Salt and pepper, to taste

  • Fresh herbs (optional: basil, oregano)

  • Optional: grilled chicken, shrimp, or additional vegetables like mushrooms or sun-dried tomatoes


Instructions

  • Boil a large pot of salted water. Add the tortellini and cook according to the package instructions (about 3-5 minutes). Drain and set aside.

  • In a large pan, heat olive oil over medium heat. Add garlic and cook for about 1 minute until fragrant.

  • Add spinach to the pan and stir until it wilts, about 2-3 minutes. Remove spinach and set aside.

  • In the same pan, add heavy cream and milk. Bring to a simmer and let it thicken slightly for about 2 minutes.

  • Stir in Parmesan cheese and cook until it melts into the sauce. Season with salt, pepper, and optional fresh herbs.

  • Add cooked tortellini and spinach to the pan. Stir gently to coat everything with the creamy sauce.

  • Simmer for another minute or two to heat through. Adjust seasoning if needed.

  • Serve hot, garnished with more Parmesan if desired.

Notes

You can add grilled chicken, shrimp, or tofu for extra protein.

For a dairy-free or vegan version, substitute heavy cream with coconut milk or cashew cream and use nutritional yeast instead of Parmesan.

Feel free to incorporate other vegetables like mushrooms or bell peppers for added flavor and texture.
