Ingredients

1 tbsp olive oil

1 lb Italian sausage

3 garlic cloves, minced

1 medium sweet onion, diced

2 tsp Italian seasoning

2 tbsp flour

4 cups chicken stock

1 cup tomato sauce

1 pack (9 oz) refrigerated three-cheese tortellini

½ bunch kale, chopped (~3 cups)

⅓ cup heavy cream

2 tbsp fresh basil, chopped (optional)

Salt & black pepper, to taste
Instructions

Heat olive oil in a large stockpot over medium heat. Add sausage and cook until browned, breaking into crumbles (5–7 minutes).

Add garlic, onion, and Italian seasoning. Sauté 3–4 minutes until onion softens.

Sprinkle in flour, whisking for 1 minute to form a light roux.

Slowly pour in chicken stock and tomato sauce. Stir well and bring to a boil.

Add tortellini, cover, and cook 5–7 minutes until tender.

Stir in kale and cook 2–3 minutes until wilted.

Reduce heat to low. Stir in heavy cream and basil. Season with salt and pepper.

Serve hot with crusty bread or Parmesan garnish.
Notes
Mild or spicy Italian sausage both work—adjust to taste.
Flour thickens the broth, giving a velvety texture.
Spinach is a great alternative to kale.
To freeze, prepare the soup base without tortellini, then add fresh pasta when reheating.
For a richer flavor, top with extra Parmesan and red pepper flakes.
