Description

A cozy, one-pot Italian-inspired soup with cheese tortellini, savory Italian sausage, fresh kale, and a creamy tomato broth. This comforting dinner comes together in just 30 minutes, making it perfect for busy weeknights or when you need a hearty, soul-soothing meal.


Ingredients

  • 1 tbsp olive oil

  • 1 lb Italian sausage

  • 3 garlic cloves, minced

  • 1 medium sweet onion, diced

  • 2 tsp Italian seasoning

  • 2 tbsp flour

  • 4 cups chicken stock

  • 1 cup tomato sauce

  • 1 pack (9 oz) refrigerated three-cheese tortellini

  • ½ bunch kale, chopped (~3 cups)

  • ⅓ cup heavy cream

  • 2 tbsp fresh basil, chopped (optional)

  • Salt & black pepper, to taste


Instructions

  • Heat olive oil in a large stockpot over medium heat. Add sausage and cook until browned, breaking into crumbles (5–7 minutes).

  • Add garlic, onion, and Italian seasoning. Sauté 3–4 minutes until onion softens.

  • Sprinkle in flour, whisking for 1 minute to form a light roux.

  • Slowly pour in chicken stock and tomato sauce. Stir well and bring to a boil.

  • Add tortellini, cover, and cook 5–7 minutes until tender.

  • Stir in kale and cook 2–3 minutes until wilted.

  • Reduce heat to low. Stir in heavy cream and basil. Season with salt and pepper.

  • Serve hot with crusty bread or Parmesan garnish.

Notes

Mild or spicy Italian sausage both work—adjust to taste.

Flour thickens the broth, giving a velvety texture.

Spinach is a great alternative to kale.

To freeze, prepare the soup base without tortellini, then add fresh pasta when reheating.

For a richer flavor, top with extra Parmesan and red pepper flakes.
