- 1 pound gnocchi
- 2 tablespoons olive oil
- 4 cups fresh spinach
- 4 ounces feta cheese, crumbled
- 2 cloves garlic, minced
- Salt to taste
- Black pepper to taste
- 1 teaspoon red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil and cook gnocchi until they float, about 2-3 minutes, then drain.
- Heat olive oil in a large frying pan over medium-high heat and add the cooked gnocchi.
- Cook undisturbed for 2-3 minutes until golden and crispy on one side.
- Stir and cook another 2-3 minutes until crispy on all sides.
- Reduce heat to medium and sauté garlic for 1 minute.
- Add spinach and cook until wilted, about 2-3 minutes.
- Season with salt, black pepper, and red pepper flakes.
- Remove from heat, stir in feta, and serve immediately.
Notes
- Add cherry tomatoes, bell peppers, or zucchini for variation.
- Make sure the pan is hot before adding gnocchi for best crispiness.
- Substitute spinach with kale or Swiss chard if desired.
- Store leftovers in the fridge for up to 2 days and reheat in a pan.
