- 1 tablespoon olive oil
- 1 large yellow onion, finely chopped
- 1 medium green bell pepper, finely chopped
- 1 stalk celery, finely chopped
- 1 small jalapeño, deseeded and finely diced
- 6 cloves garlic, minced
- 2 bay leaves
- 2–3 teaspoons Creole Cajun seasoning
- 1 tablespoon Worcestershire sauce
- 1 pound smoked turkey wings or ham hocks
- 1 pound dried black-eyed peas, rinsed
- 6 cups low-sodium chicken stock
- Fresh parsley, chopped, optional
Instructions
- Set Instant Pot to sauté and heat oil.
- Add onion, bell pepper, celery, and jalapeño and cook until tender.
- Stir in garlic and cook one minute.
- Add bay leaves, seasoning, Worcestershire, smoked meat, peas, and stock.
- Pressure cook for 35 minutes and allow natural release.
- Remove meat, shred, and return to pot.
- Mash some peas for creaminess, adjust seasoning, and serve.
Notes
- Mash only a portion of peas for best texture.
- Serve with rice or cornbread.
- Add extra broth when reheating if needed.
