Description

Creamy Sausage Tortellini Soup is the ultimate one-pot comfort food, combining savory sausage, tender cheese tortellini, sweet potatoes, fresh spinach, and a silky cream broth. Perfect for chilly evenings or quick weeknight meals, it’s hearty, flavorful, and fuss-free.


Ingredients

  • 12 oz sausage (spicy or mild Italian)

  • 1 Tbsp olive oil

  • 1 Tbsp Italian seasoning

  • 1 tsp paprika (regular or smoked)

  • 1 large sweet potato, peeled and cubed

  • 5 garlic cloves, minced

  • ¼ tsp red pepper flakes

  • 1 Tbsp tomato paste

  • 6 cups water (or substitute vegetable broth)

  • 8 oz three-cheese tortellini (refrigerated)

  • 4 oz fresh spinach

  • ½ cup heavy cream

  • 4 Tbsp fresh thyme (for garnish)


Instructions

  • Heat olive oil in a large pot over medium heat. Brown sausage, crumbling as it cooks. Drain grease.

  • Season sausage with Italian seasoning and paprika.

  • Add sweet potato, garlic, red pepper flakes, and tomato paste. Stir to coat.

  • Pour in water. Bring to a boil and stir to dissolve tomato paste.

  • Reduce heat, cover, and simmer for 15 minutes until sweet potatoes are tender.

  • Add tortellini, cover, and cook per package directions (about 10 minutes).

  • Stir in spinach until wilted.

  • Remove from heat and stir in heavy cream.

  • Adjust seasoning to taste and garnish with fresh thyme.

Notes

Pre-cut sweet potatoes save time.

Swap sausage for turkey or chicken for a lighter version.

Kale or Swiss chard can replace spinach.

Add broth or water when reheating to maintain texture.

Best served fresh, but tortellini and cream can be added later if freezing.
