Description

Creamy Crack Chicken Gnocchi is a rich, one-pan comfort dish made with soft gnocchi, tender shredded chicken, and a cheesy, ranch-flavored sauce. It’s creamy, cozy, and irresistibly satisfying—perfect for weeknights or family dinners.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie works great)

  • 1 package gnocchi (fresh, frozen, or shelf-stable)

  • 4 oz cream cheese

  • 1 cup shredded cheddar cheese

  • 1/2 cup milk or heavy cream

  • 1 cup chicken broth

  • 1/2 onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon ranch seasoning mix

  • 1 cup fresh spinach (optional)

  • 1 tablespoon olive oil or butter

  • Salt and pepper to taste

Instructions

  • Cook the gnocchi: Boil in salted water per package directions (about 2–3 minutes). Drain and set aside.

  • Sauté: In a large skillet, heat oil or butter over medium heat. Add onion and garlic. Sauté until soft (about 2–3 minutes).

  • Add cream cheese: Lower heat and stir in cream cheese until smooth.

  • Make the sauce: Add chicken broth and milk. Stir until creamy.

  • Season and melt: Add ranch mix and cheddar cheese. Stir until the cheese melts and the sauce thickens.

  • Add chicken: Stir in the shredded chicken to coat with sauce.

  • Combine: Fold in cooked gnocchi and simmer for 3–5 minutes.

  • Optional greens: Stir in spinach until wilted.

  • Taste & serve: Season with salt and pepper. Serve hot.

Notes

  • Want it lighter? Use low-fat dairy or substitute Greek yogurt for cream cheese.

  • For a vegetarian version, swap chicken for mushrooms or white beans and use veggie broth.

  • Gnocchi cooks quickly—don’t overboil it.

  • Add fresh herbs like parsley or chives before serving for a flavor boost.
