Ingredients
-
2 cups cooked, shredded chicken (rotisserie works great)
-
1 package gnocchi (fresh, frozen, or shelf-stable)
-
4 oz cream cheese
-
1 cup shredded cheddar cheese
-
1/2 cup milk or heavy cream
-
1 cup chicken broth

1/2 onion, chopped
-
2 cloves garlic, minced
-
1 tablespoon ranch seasoning mix
-
1 cup fresh spinach (optional)
-
1 tablespoon olive oil or butter
-
Salt and pepper to taste
Instructions
-
Cook the gnocchi: Boil in salted water per package directions (about 2–3 minutes). Drain and set aside.
-
Sauté: In a large skillet, heat oil or butter over medium heat. Add onion and garlic. Sauté until soft (about 2–3 minutes).
-
Add cream cheese: Lower heat and stir in cream cheese until smooth.
-
Make the sauce: Add chicken broth and milk. Stir until creamy.
-
Season and melt: Add ranch mix and cheddar cheese. Stir until the cheese melts and the sauce thickens.
-
Add chicken: Stir in the shredded chicken to coat with sauce.
-
Combine: Fold in cooked gnocchi and simmer for 3–5 minutes.
-
Optional greens: Stir in spinach until wilted.
-
Taste & serve: Season with salt and pepper. Serve hot.
Notes
-
Want it lighter? Use low-fat dairy or substitute Greek yogurt for cream cheese.
-
For a vegetarian version, swap chicken for mushrooms or white beans and use veggie broth.
-
Gnocchi cooks quickly—don’t overboil it.
-
Add fresh herbs like parsley or chives before serving for a flavor boost.
