Description

Creamy Chicken Tortilla Soup made with tender chicken, cheddar cheese, cream cheese, tomatoes, beans, and bold spices. A rich and comforting Mexican-inspired soup perfect for cozy nights.


Ingredients

  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 1 jalapeño pepper, diced
  • 3 cloves garlic, diced
  • 1 tablespoon tomato paste
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
  • 1 (15 oz) can black beans, drained and rinsed
  • 5 cups chicken broth
  • 2 small boneless skinless chicken breasts or 2 cups shredded chicken
  • 1 pinch cayenne pepper
  • 1 teaspoon cumin
  • 1 to 2 teaspoons hot sauce
  • 1 oz packet taco seasoning (about 3 tablespoons)
  • 1 1/2 cups cheddar cheese, shredded
  • 1/3 cup cream cheese, softened
  • Corn or flour tortillas for garnish

Instructions

  1. Melt butter over medium heat and sauté onion and jalapeño for 5 to 6 minutes.
  2. Add garlic and cook for 1 minute.
  3. Stir in tomato paste, corn, Rotel tomatoes, black beans, chicken broth, chicken, cayenne, cumin, hot sauce, and taco seasoning.
  4. Bring to a gentle simmer and cook partially covered for 20 to 25 minutes until chicken is cooked through.
  5. Remove chicken, shred with two forks, and return to the pot.
  6. Reduce heat to low and gradually stir in cheddar and cream cheese until smooth.
  7. Taste and adjust seasoning as needed.
  8. Fry tortilla strips in oil until crisp and use for garnish before serving.

Notes

  1. Use rotisserie or leftover chicken if preferred.
  2. Allow cheese to come near room temperature before adding for smooth melting.
  3. Do not boil rapidly after adding chicken to keep it tender.
  4. Add cheese over low heat to prevent grainy texture.
  5. Store leftovers in refrigerator for up to 3 days.
