Description

A creamy carrot raisin salad with apples, pecans, and a dairy-free dressing that is quick, fresh, and perfect for any occasion.


Ingredients

Scale
  • 4 cups grated or shredded carrots
  • 1 medium apple julienned (about 1 cup)
  • 1/4 cup chopped pecans
  • 1/4 cup golden raisins
  • 1/4 cup black raisins
  • 1/4 cup avocado mayo
  • 1 tablespoon maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh lemon zest
  • 1/2 teaspoon kosher salt
  • Pinch of black pepper

Instructions

  1. Grate fresh carrots and julienne the apple.
  2. Add carrots, apple, pecans, golden raisins, and black raisins to a large bowl.
  3. In a separate bowl whisk avocado mayo, maple syrup, lemon juice, lemon zest, salt, and pepper until smooth.
  4. Pour the dressing over the salad and toss until evenly coated.
  5. Serve cold or at room temperature.
