Ingredients

- 4 cups grated or shredded carrots
- 1 medium apple julienned (about 1 cup)
- 1/4 cup chopped pecans
- 1/4 cup golden raisins
- 1/4 cup black raisins
- 1/4 cup avocado mayo
- 1 tablespoon maple syrup
- 1 tablespoon lemon juice
- 1 tablespoon fresh lemon zest
- 1/2 teaspoon kosher salt
- Pinch of black pepper
Instructions
- Grate fresh carrots and julienne the apple.
- Add carrots, apple, pecans, golden raisins, and black raisins to a large bowl.
- In a separate bowl whisk avocado mayo, maple syrup, lemon juice, lemon zest, salt, and pepper until smooth.
- Pour the dressing over the salad and toss until evenly coated.
