Description

Creamy Cajun Chicken Spaghetti with Garlic Mozzarella Sauce is a rich pasta dish that combines Cajun seasoned chicken with a creamy garlic cheese sauce made with mozzarella, Parmesan, and cream cheese.


Ingredients

  • 1 pound boneless skinless chicken breasts cut into bite sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 pound spaghetti
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1/4 cup all purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 8 ounces cream cheese softened
  • 2 cups shredded mozzarella cheese divided
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Optional red pepper flakes

Instructions

  1. Cook spaghetti according to package directions in salted water until al dente then drain and set aside
  2. Season chicken pieces with Cajun seasoning and smoked paprika
  3. Heat olive oil in a large skillet over medium high heat and cook chicken for 6 to 8 minutes until browned and fully cooked
  4. Remove chicken from skillet and set aside
  5. In the same skillet melt butter over medium heat then add minced garlic and cook for 1 minute
  6. Sprinkle flour into the skillet and whisk continuously for 1 to 2 minutes to form a roux
  7. Gradually whisk in milk and chicken broth stirring constantly until smooth and slightly thickened
  8. Add cream cheese and 1 cup mozzarella cheese stirring until melted and smooth
  9. Stir in Parmesan cheese then season with salt pepper and optional red pepper flakes
  10. Return cooked chicken to the sauce and simmer for 2 to 3 minutes
  11. Add cooked spaghetti and toss until pasta is fully coated in the creamy sauce
  12. Sprinkle remaining mozzarella cheese on top cover skillet and let cheese melt for 2 to 3 minutes before serving

Notes

  1. Use rotisserie chicken or leftover cooked chicken for a faster version
  2. Swap spaghetti with fettuccine linguine or penne if preferred
  3. Adjust spice level by adding more or less Cajun seasoning
  4. Store leftovers in the refrigerator for up to 3 days and reheat gently
