- 20 ounces cherry tomatoes
- 1/2 small white onion, minced
- 1/4 cup sun-dried tomatoes
- 1/4 cup olive oil
- 3 garlic cloves, minced
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 8 ounces full-fat cream cheese
- 2 cups baby spinach
- 8 ounces pasta of choice
- Fresh basil for garnish
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Add cherry tomatoes, onion, sun-dried tomatoes, olive oil, garlic, Italian seasoning, salt, and pepper to a baking dish.
- Stir everything together evenly.
- Place the cream cheese block in the center of the baking dish.
- Bake uncovered for 35 to 40 minutes until the tomatoes burst and the cream cheese turns golden.
- Cook the pasta according to package directions and drain.
- Mash the roasted tomatoes and stir the cream cheese into the vegetables to create a creamy sauce.
- Add spinach and stir until wilted.
- Mix in the cooked pasta until evenly coated.
- Garnish with fresh basil and serve warm.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Add a splash of milk or pasta water when reheating to loosen the sauce.
- Use full-fat cream cheese for the best creamy texture.
