Description
Fresh Cranberry Blueberry Salad with crisp greens, juicy berries, and a homemade blueberry balsamic dressing. Light, fruity, and ready in minutes.

- 1 heaping cup blueberries
- 1 4-5 oz spring mix salad greens
- 1/2 English cucumber chopped
- 1/2 cup mandarin orange segments
- 1/4 cup dried cranberries
- 2–4 tablespoons roasted unsalted sunflower seeds
- 1 cup blueberries
- 1/3 cup balsamic vinegar
- 2 tablespoons red wine vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 teaspoon sea salt
- 1/8 teaspoon black pepper
- 1/2 cup avocado oil
Instructions
- Add blueberries, balsamic vinegar, red wine vinegar, Dijon mustard, honey, salt, and pepper to a blender.
- Blend until smooth and fully pureed.
- Slowly drizzle in avocado oil while blending until dressing is emulsified.
- Wash and dry salad greens thoroughly.
- Add greens to a bowl with chopped cucumber and fresh blueberries.
- Drizzle dressing lightly and toss to combine.
- Top with mandarin oranges, dried cranberries, and sunflower seeds.
- Serve immediately.
Notes
- Prepare salad base ahead and add dressing just before serving.
- Store extra dressing in the refrigerator for several days.
