Description

French Onion Noodle Soup combines the rich, caramelized flavors of classic French onion soup with hearty noodles for extra comfort. Topped with gooey melted cheese, this cozy one-pot meal is perfect for chilly nights, busy weeknights, or family dinners. It’s indulgent, deeply flavorful, and surprisingly easy to make.

  • ½ cup salted butter (113 g)

  • 4 sweet onions, sliced (about 800 g)

  • 8 cups beef broth (1.9 liters)

  • ¼ cup cooking sherry (60 ml)

  • ½ tbsp granulated sugar (optional, 6 g)

  • 2 tbsp all-purpose flour (16 g)

  • 2½ tsp salt (12 g)

  • 2 tsp Worcestershire sauce (10 ml)

  • 2 dried bay leaves

  • 2 fresh thyme sprigs

  • 340 g egg noodles (12 oz)

  • 225 g Swiss or Gruyere cheese, shredded (8 oz)


Instructions

  • In a large soup pot, melt butter over medium heat. Add sliced onions and cook slowly, stirring often, for 20–25 minutes until caramelized and golden.

  • Stir in flour, sugar (if using), salt, Worcestershire sauce, broth, and sherry. Whisk well and scrape up any browned bits from the pot.

  • Add bay leaves, thyme, and egg noodles. Bring to a boil, then reduce the heat and simmer 30 minutes until the noodles are tender and the flavors have melded.

  • Remove bay leaves and thyme. Ladle soup into bowls and top generously with shredded cheese. Garnish with thyme or black pepper.

Notes

Caramelize onions low and slow for deep flavor.

Gruyere adds nuttiness, Swiss is milder—both melt beautifully.

Sherry enhances the broth, but white wine or extra broth works too.

For a creamier version, stir in a splash of heavy cream before serving.

If freezing, cook noodles separately and add fresh ones when reheating.
