Description

A fresh and easy Cowboy Caviar recipe packed with beans, corn, and a tangy homemade dressing. Perfect as a dip or salad.


Ingredients

Scale
  • 15 oz black beans drained and rinsed
  • 15.25 oz sweet corn drained
  • 1 small red bell pepper diced
  • 1 jalapeño minced
  • 1/3 cup cilantro chopped
  • 3/4 cup red onion diced
  • 2 avocados diced
  • 1/4 cup lime juice
  • 2 tbsp red wine vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp honey
  • 1/4 tsp chili powder

Instructions

  1. Combine dressing ingredients in a bowl and whisk well
  2. Add beans corn pepper jalapeño cilantro and onion to a large bowl
  3. Pour dressing over mixture and toss to coat
  4. Gently fold in diced avocado
  5. Serve immediately or chill before serving

Notes

  1. Add avocado just before serving for best texture
  2. Use fresh lime juice for better flavor
  3. Store in fridge up to 2 days
