Description

Fresh Cowboy Caviar Appetizer made with black beans, black-eyed peas, corn, tomatoes, peppers, and a spicy lime vinaigrette.


Ingredients

Scale
  • ⅓ cup olive oil
  • 2 tablespoons fresh lime juice
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground cayenne
  • ¼ teaspoon red pepper flakes
  • 1 can black beans drained and rinsed
  • 1 can black-eyed peas drained and rinsed
  • 1½ cups fresh corn kernels
  • ¼ cup finely chopped red onion
  • 1 cup quartered grape tomatoes
  • 1 minced jalapeño
  • 1 finely diced bell pepper
  • ⅓ cup chopped fresh cilantro
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Whisk together olive oil, lime juice, chili powder, cumin, garlic powder, cayenne, and red pepper flakes.
  2. Drain and rinse the black beans and black-eyed peas thoroughly.
  3. Finely chop the onion, jalapeño, bell pepper, cilantro, and tomatoes.
  4. Combine beans, peas, corn, tomatoes, onion, jalapeño, bell pepper, and cilantro in a large bowl.
  5. Pour the vinaigrette over the mixture and toss gently to coat evenly.
  6. Season with salt and black pepper to taste.
  7. Cover and refrigerate for at least 30 minutes before serving.
  8. Toss again before serving and enjoy with tortilla chips or grilled meats.

Notes

  1. Use fresh corn when available for the best flavor.
  2. Chop vegetables finely for easier scooping with chips.
  3. Add diced avocado right before serving if desired.
  4. Store leftovers in an airtight container for up to 4 days.
  5. Substitute pinto beans for black beans if preferred.
