Cowboy Butter Steak Sliders are juicy, bite-sized steak sandwiches layered with caramelized onions, melted Havarti cheese, and a bold, garlicky cowboy butter sauce. They’re indulgent yet easy to prepare, making them perfect for cookouts, game nights, or any gathering where you want to impress with big flavor in a handheld format.
Ingredients
For the Sliders

680 g (1.5 pounds) boneless steak (ribeye, filet, or sirloin)

3 sweet onions, thinly sliced

9 slider buns

340 g (¾ pound) sliced Havarti cheese
For the Cowboy Butter

113 g (1 stick) unsalted butter, room temperature

4 garlic cloves, minced

Juice and zest of ½ lemon

1 tbsp Dijon mustard

1 tsp paprika
-
½ tsp cayenne pepper

½ tsp dried thyme
-
1 tsp red pepper flakes

1 tbsp minced chives

2 tbsp minced fresh parsley

Kosher salt and pepper, to taste
Instructions

Prep the Steak: Trim excess fat, rub with oil, season generously with salt and pepper. Wrap and chill for a few hours or overnight.

Make the Cowboy Butter: In a saucepan, melt butter over low heat. Whisk in lemon juice, zest, garlic, mustard, paprika, cayenne, and thyme. Remove from heat; stir in chives and parsley. Reserve a few tablespoons for grilling.

Grill the Steak: Preheat grill to medium-high with an indirect zone. Grill steaks 2–3 minutes per side over direct heat, brushing with cowboy butter. Move to indirect heat to finish, about 5–6 minutes. Rest 10 minutes, then slice thinly against the grain.

Caramelize Onions: In a skillet over medium heat, cook onions with butter until golden and sweet, about 15 minutes.

Assemble Sliders: Preheat broiler. Slice slider buns, brush insides with cowboy butter, and layer Havarti cheese on both sides. Add caramelized onions and sliced steak to bottom buns. Broil 1–2 minutes until cheese melts. Top with buns and serve.
Notes
Rest steak before slicing to keep juices inside.
Freshly melted Havarti gives the best texture, but provolone or Monterey Jack also work.
Make cowboy butter ahead to save time.
Caramelized onions are key—don’t rush them.
Leftover cowboy butter is great on veggies or grilled chicken.
