Description

A fresh and easy corn salsa made with black beans, lime, and vegetables. Perfect for parties or quick snacks.


Ingredients

Scale
  • 1 can black beans drained and rinsed
  • 1 can corn drained and rinsed
  • 1/3 cup chopped red onion
  • 1 red bell pepper chopped
  • 3 tablespoons scallions
  • 1/4 cup cilantro chopped
  • 2 limes juiced
  • 1/4 cup olive oil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • salt and pepper to taste

Instructions

  1. Drain and rinse beans and corn
  2. Chop vegetables and combine in bowl
  3. Whisk lime juice olive oil and spices
  4. Pour dressing over mixture and stir
  5. Adjust seasoning to taste
  6. Refrigerate for one hour before serving

Notes

  1. Chill longer for better flavor
  2. Use fresh corn when possible
  3. Add jalapeno for spice
