Description
Classic Louisiana Corn Maque Choux made with fresh corn, bacon, peppers, onion, and cream.
Ingredients

- 3 slices thick-cut bacon
- 4 ears fresh corn
- 1 red bell pepper
- 1 sweet onion
- 1 jalapeño
- 2 tablespoons all-purpose flour
- 2 teaspoons Creole seasoning
- 1 teaspoon sugar
- 1 cup heavy cream
- Salt
- Black pepper
- Green onion for garnish
Instructions
- Cook bacon in a skillet until crisp
- Remove bacon and reserve about 2 tablespoons bacon fat
- Cut corn from cobs and scrape cobs for corn milk
- Combine corn, vegetables, flour, seasoning, and sugar
- Sauté mixture in bacon fat until softened
- Reduce heat and stir in heavy cream
- Cover and simmer until thick and creamy
- Season with salt and pepper
- Top with chopped bacon and serve
Notes
- Fresh corn provides the best flavor
- Adjust jalapeño for desired heat level
- Stir occasionally while simmering
