Description

These cinnamon roll cookies combine the flavor of classic rolls with soft, chewy cookie texture and rich cream cheese frosting.


Ingredients

2 1/2 cups All-Purpose Flour

1 1/2 cups Cake Flour

2 tsp. corn starch

1 tsp. baking soda

1 tsp. baking powder

1 tsp. salt

1 cup cold, unsalted butter

1 1/4 cup granulated sugar

2 large eggs

2 large egg yolks

1 tsp. vanilla extract

For the Cinnamon Filling:

1 cup brown sugar

6 Tbsp. butter

2 Tbsp. cinnamon

For Frosting:

8 oz. cream cheese

1/2 cup butter

2 1/2 cups confectioners sugar

1 tsp. vanilla

1/2 tsp. salt


Instructions

1. Preheat oven to 400°F.

2. Mix brown sugar, butter, and cinnamon for filling.

3. Combine flours, cornstarch, baking soda, baking powder, and salt.

4. Cream butter and sugar, add eggs and vanilla.

5. Incorporate dry ingredients gradually.

6. Flatten dough, spread filling, roll tightly.

7. Slice, shape, bake for 9–11 minutes.

8. Cool and frost with cream cheese mixture.

Notes

Store cookies in fridge up to 5 days. For smaller cookies, bake 8 minutes. Seal edges to keep filling inside.
