For the Cookie Dough:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2 1/2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp baking powder

For the Cinnamon Sugar Swirl:

  • 1/4 cup brown sugar

  • 1 tbsp ground cinnamon

  • 1/4 cup unsalted butter, melted

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened

  • 1/2 cup powdered sugar

  • 1 tsp vanilla extract


Instructions

  • Prepare the Cream Cheese Filling:
    In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Scoop into tablespoon-sized portions and freeze for at least 30 minutes.

  • Make the Cookie Dough:
    In a large bowl, beat butter and granulated sugar until light and fluffy. Add eggs, one at a time, followed by vanilla extract. Mix until smooth.
    In another bowl, whisk flour, baking soda, and baking powder, then gradually add to the wet mixture. Stir until combined.

  • Make the Cinnamon Sugar Swirl:
    In a small saucepan, melt butter over low heat. Stir in brown sugar and cinnamon until smooth.

  • Assemble the Cookies:
    Preheat oven to 350°F (175°C).
    Scoop dough and flatten into discs. Place a frozen cream cheese ball in the center of each disc.
    Fold the dough around the filling and roll into a ball. Coat each cookie ball in the cinnamon sugar mixture.
    Place cookies on a baking sheet and bake for 10-12 minutes, or until edges are golden.

  • Cool:
    Let the cookies cool on a wire rack before serving.

Notes

Freeze the cream cheese filling before adding to the dough to prevent it from melting during baking.

Don’t overmix the dough, as it can make the cookies tough.

For a vegan version, use dairy-free butter and cream cheese, and replace eggs with a flaxseed or chia egg.
