  • 2 large eggs

  • ½ cup melted butter

  • 1 cup chopped pecans

  • 1 cup corn syrup (or maple syrup/agave syrup)

  • 1 cup brown sugar

  • 2 large eggs (for the filling)

  • 1 tsp vanilla extract

  • 8 oz cream cheese, softened

  • 1 ½ cups powdered sugar

  • 2 large eggs (for the topping)

  • 1 tsp vanilla extract

  • Optional: chocolate chunks, caramel sauce for drizzling


Instructions

  • Prepare the Base: In a large bowl, combine chocolate cake mix, eggs, and melted butter. Stir until smooth, then press the mixture into a greased baking dish.

  • Make the Pecan Filling: Whisk together eggs, brown sugar, corn syrup, vanilla extract, and chopped pecans. Pour over the cake base.

  • Make the Topping: In another bowl, beat softened cream cheese until smooth. Add powdered sugar, eggs, and vanilla extract. Mix until fluffy. Spread over the pecan filling.

  • Bake the Cake: Preheat the oven to 325°F (163°C). Bake for 45-50 minutes until the edges are set, and the center slightly jiggles when shaken.

  • Cool and Serve: Let the cake cool in the pan. Cut into squares and serve. Optionally, top with caramel sauce or a scoop of vanilla ice cream.

Notes

Use a dense cake mix for the base to keep the layers separate.

You can make this cake ahead of time; it’s even better the next day.
