Description

Chocolate Cherry Upside Down Cake is a rich and easy dessert with juicy cherries and soft chocolate cake perfect for busy weekdays.


Ingredients

  • 2 cups fresh or frozen pitted cherries
  • 1/3 cup sugar
  • 1 teaspoon cornstarch
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/3 cup plus 1 tablespoon cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 cup soured milk
  • 1/2 cup brewed black coffee
  • 1/4 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • Whipped cream or vanilla ice cream for serving

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and grease a 9-inch cake pan with parchment paper.
  2. Mix the sugar and cornstarch together, then toss with the cherries until coated.
  3. Spread the cherries evenly in the prepared pan.
  4. Combine all remaining cake ingredients in a large mixing bowl.
  5. Beat the batter for 2 minutes until smooth.
  6. Pour the batter evenly over the cherries.
  7. Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
  8. Cool the cake for 5 minutes before turning onto a serving plate.
  9. Serve warm or cold with whipped cream or vanilla ice cream.

Notes

  1. To sour milk, stir 1 teaspoon of vinegar or lemon juice into the milk.
  2. Frozen cherries should thaw slightly before use.
  3. For extra richness, drizzle the cake with chocolate ganache before serving.
